Magdy Mandour Import & Export Company makes sure that the fish it imports is immediately frozen on board of vessel. To ensure a relatively low price level and high quality, the pelagic fish are chilled immediately after capture and subsequently frozen on board. This freezing and production process is carried out under strict conditions of hygiene, ruling out the chance of contamination or decay.

The fish processing industry in Egypt may be subdivided into two major categories: fish handling, which is initial processing of raw fish and fish products manufacturing. Another natural subdivision is into primary processing involved in the filleting and freezing of fresh fish for onward distribution to fresh retail and catering outlets, and the secondary processing that produces chilled, frozen, canned, dried, salted, pickled and smoked products for the retail and catering trades. Shelf life for fish in Egypt is 6 months.

Pelagic fish imported consists of Horse Mackerel, Mackerel, Silver Smelt, Herring, Blue Whiting, Sardine, Sardinella and Grey Mullet. We import our fish from the Netherlands, Japan, Germany, chili, Morocco and Mauritania.

Horse mackerel: (Trachurus trachurus)
is mostly caught in the waters of Scotland and Ireland, in the Gulf of Biscay and, since 1996,
in the Atlantic Ocean off the coast of Mauritania.
The female produces up to 140.000 pelagic eggs.
It is one of the most important pelagic species for the freezer-trawler fleet.

Mackerel: (Scomber scombrus) is found in the northern part of the North sea and west of Scotland and Ireland. In January the mackerel off the Shetland Islands becomes of importance to the fishing fleet. From there, the mackerel gradually goes south. The population divides into three groups. A small group swims into the North Sea ('east' mackerel), another group stays in the Irish sea areas and the largest group goes southwards along the Scottish and Irish west coast. Mackerel is either canned or smoked.

Silver Smelt: The great silver smelt is somewhat herring-like in appearance.
It is a streamlined fish with silvery coloration and large scales.
It has huge eyes, covering almost half the head.
The great silver smelt is usually frozen whole aboard the trawler, but also processed into fish paste.

Herring: (Clupea harengus) can be found at depths down to 200 meters in the North Sea and along the borders of the Atlantic Ocean. The Herring can be divided in different populations, which are mainly distinguished by size of the fish, rate of growth and migration routes. This fish is sold all through the year. Smoked Herring is very popular in Egypt, however recently they started pickling it.

Blue Whiting: (Micromesistius poutassou) lives in the open ocean at depths of 100 - 1000 meters.
Often found above the continental slope, mainly at depths of 150 - 400 meters.
They follow the vertical migrations of their food, the zooplankton, towards surface at night and towards the bottom in the morning. Blue Whiting is usually frozen whole.

Sardine: Sardines, or pilchards, are several types of small, oily fish related to herrings, family Clupeidae.
Sardines are typically tightly packed in a small can which is scored for easy opening either with a pull tab or a key, attached to the side of the can. Thus, it has the virtues of being an easily portable, non-perishable, self-contained food. Sardines are also sold fresh or frozen on the market.

Sardinella: (Sardinella aurita) belongs to the same family as the herring.
This species has a wide distribution in West African waters.
There are in fact two species of sardinella: the flat and the round sardinella.
The round sardinella is more numerous and occurs further from the coast than the flat sardinella. Sardinella is processed into minced fish fillet.

Grey Mullet: The mullets or gray mullets are a family (Mugilidae) of ray-finned fish found worldwide in coastal temperate and tropical waters, and in some species in fresh water also. Mullets have served as an important source of food in Mediterranean Europe since Roman times. Grey Mullet is sold frozen or fresh on the market.
